Started a new Facebook Group

I started a new Facebook group called Low Carb Living with a friend from My Fitness Pal named Andy. Andy has been doing LCHF for 4 1/2 months and has lost 157 pounds. He is an inspiration to me and many others. If you read this blog and are interested in the LCHF  aka Ketogenic way of eating please feel free to join us. In other news, here are a few LCHF veggie side recipes from the group so you can get an idea of what we do. Our recipe files are growing daily.

Bacon and Broccoli Crack Slaw

Tools you will need:
Ingredients:
  • 2-3 slices bacon
  • 2 cups of broccoli slaw mix
  • 1 tbsp kerrygold butter (optional but I love it!)
  • 1 tbsp soy sauce
Instructions:
  • Cut bacon into small pieces (I use scissors)
  • fry bacon until done to your liking
  • Add butter and 2 cups broccoli slaw to the pan
  • Stir fry until the broccoli sticks soften
  • Add 1 tbsp soy sauce, stir fry another minute or so.  The soy sauce will cause everything to brown up.
Put in a bowl and eat up!  Fast, easy, delicious!

Cauliflower Rice

Take 1/2 large head of cauliflower, wash it and break into chunks. Place in your food processor.  Pulse until it looks like rice!
My favorite way to have it is just like in the photo.  Here are the instructions:
  1. In a non stick ceramic pan with either 2 tbsp olive oil, butter or coconut oil, saute 3 chopped green onions and 2-3 sprigs of chopped parsley.
  2. Add in the riced cauliflower.
  3. Stir in 2 teaspoons cumin.
  4. Fry the ‘rice’ until it is the texture you want.  I like it almost soft.

Cauliflower Mashed Potatoes

Break a head of cauliflower in chunks and boil until fork tender.
  1. Once they are tender, place them in the food processor.
  2. Add 2 tablespoons butter and 2 tablespoons cream
  3. Puree until smooth.  You might have to scrape the sides once.
